Can I still trim St. Louis Style after cooking??

would'nt be eaiser to cut through the meat cooked/
 
Yeah... if you have aleady cooked them and they are tender I would just leave them as is, unless you don't mind about the trimmed section looking a little ragged. The other option is if you are going to serve them the next day, it to cut them when they are cold, the meat will firm up a bit and cut cleaner.
