Dang, get that head cut off before it ruins the meat. Shark meat is awesome and often passed off as swordfish to the unknowing.
 
If it can be cooked ............... it has to be better smoked.

Just cut into steaks after preparing it. Grilled, smoked, or baked is awesome.
That's how we used to do Mako but would sear it on the grill in a cast iron skillet. I would give up red meat for Mako.

I cought a 6 foot blue shark a couple years back, the guy at the dock steaked it out for me for $20, got 70 lbs. of usable meat. Went back to the campfire that night and made shark mango fajitas! Damn near broke my mouth they tasted so good!

the story was in the local news and got a lot of angry responses.  but that the way I see it they caught this shark at a local beach and a spot where a lot of boaters go to hang out and swim. every 4th of July we all take our boats out their to party for the day watch the fire woks and every one is the water. The first time someones kid is attacked out there everyone will change there minds about fishing for big sharks.

That shark would not be my first choice but is considered not bad. Just remember a shark urinates thru its skin so you want to soak the flesh in very cold water. Some use butter milk too. Always best to cut and bleed them quickly after catching them.  Do not over do the cooking process.
