Hi All,
I am new to smoking and my mom is wanting to do briskets for some guests. I have done a ton of research and am feeling alright about my ability to do it. My questions are about the amount of brisket I can do. I have a Kenmore electric standing smoker and I don't think I can fit a full brisket into it. I was planning on potentially doing two flats if necessary, but I am worried about placing one on the rack above the other.
1. If I put one on the rack above the other, will grease drip onto the lower one and compromise the way it cooks?
2. Will having one on the rack above the other effect the amount of smoke the top one gets?
3. should I put foil or a tray under one or both to catch the grease or will that ruin cooking?
4. Side note: I got mine second hand and there is nothing over the tray that holds the water or the wood chips. should I put a grease tray or foil over them to protect them from dripping grease, will that block smoke/heat, or is it just unnecessary?
