I got about 8 of these in freezer and planned grinding for sausage. But would these work for capocollo ? Couldn't pass the price up. I just got #1 & #2 delivered today so it's time for some recipes and experiments.
 
Don't see why not.  It might not be the tradional cut but it should still work.   How do you plan on making it.  In a chamber?

Im still new to dry curing and learning. But Ill bet you could pop them into a UMAi bag with what you've got.
