How long can I keep it in there?

I started smoking at 5am this morning and put it in the oven around 11am @ 200 degrees. I took it off the smoker around 160 degrees internal temp and wrapped it tight in aluminum foil.

We are serving it tonight at 6pm. Can I keep it in the oven until 5pm and then let it rest for an hour?
 
Do you still have a therm in it? I'd bump up the temp to 225. To make sure it gets done. Once it is prob tender/bone pulling back you could keep it in cooler or warm oven etc. til dinner.

I haven't gotten probes and all yet. Doing everything I guess old school until after Christmas when I can buy tools.
 
Like mentioned I would bump oven up 225_250 until probe tender, you could always hold it in oven at 160 until ready to serve if it's done early.
 
I'd raise the oven temp 225-250. Then go to probe tender. I always do pulled so I don't stop till I can pull bone out clean.
 
When they say probe tender... it doesn't necessarily have to be a probe... a wooden skewer stick or some similar would work.

Got the oven at 250 degrees. We are stuck at 196 degrees internal temp! I was hoping it would be resting by now.
