US or modern wheat (also northern European) is hybrids. It is not GMO. Not defending it just stating the facts.

I have 2 friends with gluten tolerance issues. Last I talked with them, both have been too chicken to try either Einkorn or Spelt for fear of the week long consequences.
More like a soft puffy tostada, either way very satisfying.
I'm Scandinavian (got 25% Swedish from my father) and my Norwegian mother made fried bread dough as a meal now and then. Fried bread dough has been a Norwegian staple that pre dates the Navajo death march and the introduction of "fry bread". I don't like Oof-Da (local name for them) or fry bread tacos.

We have a few friends that travel the country going to rendezvous... running cook tents. Starts with breakfast early in the morning and then lunch of fry bread and indian tacos. My wife used to help one lady after her husband was killed RIP Woody Bill. Several others as well... it's a lifestyle for sure. Look around for them... they are around from Florida to Yellowstone... and the line up of people waiting in line is a sure give away of how many people love them.
