I recently bought a propane smoker. I worked fine a couple of times but then I had an overnight cook and I went to check on it in the middle of the night & the temperature dropped considerably. The fire was still lit but barely burning. There was a smoke coming out of it & had a gassy smell. From what I understand, it was un-combusted propane. So, I re-lit the fire, got the temperature back up & continued. Several hours later, same thing happened. I opened the smoker & the meat was completely black & the entire inside on the smoker had this burnt, black stuff (i assume uncombusted propane) caked all over the inside of the smoker. Needless to say, the meat was ruined. I tried to clean the inside of the smoker but there is just so much in there. I tried to use it as it was but that black stuff burns & smokes all over whatever is in there. Does anyone have any suggestions for cleaning the inside of my smoker? Does anyone have any recommendations?

check the air intake.... you aren't getting enough air mixture and the propane is burning rich and creates soot.

That is what it sounds like to me as well

I believe I would take a pressure washer to it and see what happens ..

I would cover the burner with a plastic bag or something then pressure wash as suggested then re-season it after it drys.

Using a step drill, put 6 each, 7/8" holes around the top of the side walls.... It needs ventilation.....

Not as common this time of year, but check the Venturi Tube that mixes Air and Propane. Spiders and other critters, can get in and cause reduced flow or a blockage...JJ
