Modern? Some Trivia from my teaching days...

Margarine was invented in 1869 made with oils and beef fat then Coconut oil. Starting in the 30's and full blown in the 40's and early 50's the switch was made to all Veg oil from Depression and WWII shortages of other fats. The butter industry got adding Yellow color banned. Some states required margarine to be PINK! Mom talked about buying " Oleo " that was White with a yellow dye capsule. You had to hand knead it in the package until it turned yellow. Soft Margarine came out in the 50's. That brings back some childhood memories as Grandma and Mom were use to eating margarine as it was cheap. Dad HATED the flavor and although he sauteed with margarine, insisted on Real Butter for breads, breakfast and in desserts. Growing up we had both butter and margarine. Now we are a 100% Butter house. I think they would pull my Union Card if I used Margarine...Margarine is making a comeback now that the Transfats are out and the flavorings improve. I plan to stick with butter as long as I can afford to. At $3.00 a pound and rising that may be a short lived goal...

Stopped by the Post Office today....our butter bell was there., Ernie is going to wash it tomorrow...
