So I wanted to smoke two butts for a work potluck that is on next friday and I dont have the time during the week to do a complete smoke on the smoker so I was thinking of starting the smoke once I get home from work on thursday around 5pm then once I am about to go to bed just through it in the oven at 225 with the temp probe in it and it'll just alarm when it reaches 195. Does anyone have any experience doing this and how have they turned out?
 
Yes I have done that more then once.

The last time it got to 205 around 3AM . The alarm went off . All I did was turn the oven off and went back to bed. Just let it sit in the oven

It will stay warm for awhile. Got up around 6 took it out of the oven and pulled it. still was warm. The other thing you can do is after its done

put it in a cooler with towels and then go back to bed.
 
I have finished a few butts in the oven when the weather was too cold and I was having a hard time keeping the temps up.  As long as you can monitor IT with an alarm you should be fine.  Pull the meat at 160, wrap it in foil or use a throw away aluminum pan and wrap the top with foil when you put it in the oven.  I usually put it in a pan and add some apple juice or mountain dew in the pan when I wrap it as well.
 
yeah the toweling and going back to bed sounds like a plan, I think I might still have the towels already in the cooler from my last brisket smoke. ;)
 
 
I usually run them up to 203 spray with apple juice, foil and towel and let them rest in cooler for a couple of hours then pull.
