Well,

I finally got around to doing another butt, although it's been quite some time.

This was quite a frustrating butt also, as it sat at 175-180 for several hours, while company was waiting!!

In all it took around 16 hours for the 8.2lb butt.

This is at around 4 hours:

And finished.. Qview!

Beautiful! I have totally abandoned 1.5 hrs per pound. I have tried with foiling and staight up smoking and they always go 2 hours per pound in my MES with the temp set at 225 with 220 to 240*F swings from coil cycling...JJ

Thanks everyone! I wish I had gotten some smoke ring pictures but the food was all gone before I had a chance!!

You nailed it.

The bark is to die for!

Unlike chef Jimmy, I am averaging 80 - 90 minutes a pound on a stickburner' (unfoiled), slightly less time unfoiled, at a temps around 240°.

sorry for the typo, should be foiled not unfoiled, noticed it when reading Jimmys post

I have experimented with foiling to help it through the stall and the bark has not been affected.

Bigger butts seem to take more time per/lb, for me anyhow.

Question to Jimmy, are you getting the same time per/lb on all of your smokers?
