Burgers from brisket trim . Civil smoker inspired .

I remembered I had some trim from the brisket I just did . So I thought , why not grind it up and see how it is for burgers .
Here it is ,
about a pound and a half of trim . Not alot of fat .

Made 4 burgers .

Seasoned up with steak seasoning and in the fridge for a couple hours .

Just cooked one as a test . If it's good I'll do the other 3 for a meal .
Kids were gone tonight . ( my kids are 25 and 27 )

Opened the last of my dill chips from Al's recipe . Made last year this time , crunchy and great flavor .

OK ,,, now I guess I have to grind all my burgers from brisket . The smell while this was cooking was something I can't put words to . If you have done this you know .
This is crazy good . The fat was low , no splatter on the stove top , or left in the pan , but did not notice it in the burger , It was perfect . VERY good . I'm hooked on brisket for sure .

Hmmm. I just happen to have about 3 pounds of brisket trim in the freezer right now. Guess I know what I need to make this weekend.

I buy briskets and grind the whole thing we like it so much. We do the same with tri tips that I buy by the bag which has 4 to 6 peeled but not trimmed T.T. in them. The ultimate burger for us is 50/50 brisket & T.T.:emoji_yum:

Looks great...I was thinking of using brisket for the beef and some pork belly for the fat in a 80/20 mix....of course I need to scrounge up a meat grinder first.
 
Hell yeah! I ground up a whole brisket a couple months ago when they were on sale for $1.99lb. So good! Still got a few pounds in the freezer think it might be burger time this weekend! Or maybe wings haven't decided haha
 
LIKE I like especially like the checkered liner.

This has me pretty much convinced to try this. Wife is paying $4-5/lb for ground chuck. GFS brisket is $3.49 and often on sale for $3.00. If you have his book, Franklin trims the heck out of his brisket so he has tons of trim. He doesn't say it but I bet serious money it is used for his sausage so there's another use for it.

Oh crap....I never even thought about doing self grind from a brisket......Now just need to talk the wife into why we need to...
 
Thanks for looking guys . Those baskets are cool , and better than paper plates in this case . I bought those at home depot , 4 for 5 bucks .
I'll be grinding up a whole brisket in the near future . Cheaper and better .
