Burger Meat - Sams Chuck Brisket Burgers

I would love to have your brat burger recipe and pizza burger setup?
This is Polka Polka brat recipe that I've made many times. I always do 1/4 lbs patties. Myself, my family and friends swear it's the best they have ever had. Per 5 pounds of meat of your choice:

1 Tbsp Sugar
3 Tbsp Salt
(if you wish to smoke these, add 1 tsp cure #1)
2 tsp Black Pepper
2 tsp Onion Powder
2 tsp Garlic Powder
2 tsp Ginger
2 tsp Marjoram
1 tsp Caraway seed, ground is better
1 tsp Coriander

These next ingredients set German Brats apart from
other sausage's flavor profile, and texture:

1 tsp Cardamom
2 drops lemon extract (NOT 20!) (or 2 tsp zest)
1 tsp Nutmeg or Mace
2 eggs
1 cup heavy cream

Brat info is in the thread below. Pizza burger I just got Leggs 103 Hot Italian to try. jcam222 jcam222 Thanks for the polka info, forgot the name but yeah lots of happy folks used it. AC Leggs brat mixes are VERY good so grab those if not wanting to roll your own. Approach both brat and pizza burgers as a concept. Add what you want to your burger. Kraut, mustard, onion, swiss cheese are common options for brat. Pizza burger options would be marinara or pizza sauce, provolone, pepperocini, onions, olives. Do what you want and play around with it. Try sauteed onions in beer and butter for the brat for a tailgate vibe. Either will be mind blowing to the uninitiated and best of all CHEAP. Brat burger is common here and lots of places sell it loose.

Extracts used to come with an eyedropper in the bottle . 20 drops is a good number as longs as it's drops . Not tips , pours or I think that was a drop .
I use 1/4 tsp per 2 1/2 pounds of grind .

Last couple times buying Burger Meat at Albertson not been very good. Sam's has some pre-made Chuck Brisket burgers that has great reviews. Was wondering if anyone has tried them? Man beef getting $$.
I'll keep an eye out for those. thanks for the heads up. I'm picky on my GB, usually waiting for that rare time when Publix offers whole brisket for $3.99/lb. Catch them on a good day and they will separate point and flat.(not well) point is saved for burnt ends cook and the whole flat goes into the grinder for patties. It would be nice to find "decent" pre-mades to vac suck without breaking the bank for when it's griddle burger time. Grocery store 80/20 is usually pitiful(for the price) and mama buys it for tacos or sloppy Joes (Manwich)

Yeah that burger was pretty good. I have several in the freezer now. I will smoke a couple for sloppy joes next.
 
Just like everyone else on the $.
Eating a lot more chicken and seafood (which I should anyway).
I do have a rib roast, a couple ribeyes, and some ground left in the freezer. Watching “sales” to restock.
Where I am, we find sales with 80/20 for 4.99 and 93/7 a buck more, but not great quality. Seem to never see chuck less than 7.
