Im building a smoker and was wanting to make it a offset, reverse flow, water pan cooker with the water pan going the length of the chamber. My question is, with it being an offset smoker, will enough heat be in the chamber to heat the waterpan in the chamber? If so, is there an amount of water that is too much water? Or does it not matter as long as the temp gets to what i need?
