Building a smoker

Discussion in 'Reverse Flow' started by hideyerpigsbbq, Oct 5, 2015.

  1. Im building a smoker and was wanting to make it a offset, reverse flow, water pan cooker with the water pan going the length of the chamber. My question is, with it being an offset smoker, will enough heat be in the chamber to heat the waterpan in the chamber? If so, is there an amount of water that is too much water? Or does it not matter as long as the temp gets to what i need?

Water is a great heat regulator. Meaning an open pot of water on the stove will never get above 212 degrees until all the water is gone.

Sounds like you want to create something similar?
