So I was in Houston for work for a week. Tried several BBQ joints. I liked BrookStreet the best. I really liked the sausages from each of the places I tried though. I liked the smoke flavor more at Brook Street.
Any way, my question is, what is the basic type of "Texas" style BBQ sausage? And if your willing to share a recipe?
