I'm from my. I've been watching my dad cook for years and I'm 35 now. I've smoked an grilled and deep fried everything. This weekend I'm going to smoke a small brisket. This will b a 1st for me. It's going to b trial and error I know. Last night I put my dry rub on in an rapped it. It's a fairly small brisket. Any advise on what my next move should b? My plan was to take it out of the foil in the am. Let it rest,then smoke over hickory unrapped for about 3hrs then rap for around 1 an unrap for another hr or so. While spraying with Apple juice in between.its about 6lbs. Does that sound about right? Or am I way off? An should I inject? Like I said 1st time ever smoking this type of meat.
