Here's a rookie question, when estimating the cooking time for a brisket I see a rule of thumb as 1.5 hrs for each pound. Ex, 8 lb untrimmed brisket, roughly 12hrs cooking to reach finished temp. Here's my question, if that single 8lb piece of meet will not fit in my smoker ( I know, buy a larger smoker) and I need to cut it into two pieces to fit on the racks, how long should I plan on cooking it? Do two 4 lb pieces equal around 6hrs of cooking or am I still looking at around 12?
