Here's a rookie question, when estimating the cooking time for a brisket I see a rule of thumb as 1.5 hrs for each pound. Ex, 8 lb untrimmed brisket, roughly 12hrs cooking to reach finished temp. Here's my question, if that single 8lb piece of meet will not fit in my smoker ( I know, buy a larger smoker) and I need to cut it into two pieces to fit on the racks, how long should I plan on cooking it? Do two 4 lb pieces equal around 6hrs of cooking  or am I still looking at around 12?

Thanks for your help!

Anthony

Hey Anthony,

If you have two four pounders after cutting in half that basically cuts your smoking time in half.  To be safe I would figure 2 hours per pound but cook to an internal temperature of about 195-200 degrees F.  Probably about 8 hours or so.

Good Luck,

Bill
