Brisket Temps fluctuating

Hey y'all been smoking a 12 pder and a 15 pder for about 16 hours Question: My meat prob was reading 195 but when I took it out and used another probe it said 180. Now putting it back in its reading 180 thoughts?

Probably 180 then. Have you tested both probes in boiling water before to make sure they are correct? Boil some water and test. Should read 212.
