You read correctly. This was done on 09-24-08 & I got swamped before I could post it all. So, here goes:

13.6 lb Brisket, fat scored & awaiting some TLC;


Scored and salted with Kosher;


How about some nice course & fresh ground seasonings?




How about some nice slow smoke to get things started?


Shall I get out some spares too? OK, why not;


First slab ready for rubbing with...


how about some nice HOT stuff?

Is it gonna be humid enough? C'mon...no worries, goin' through a gallon-plus of H2O per hour!!!!!!!!! Nice slow smoke goin' too. Gotta love it!


Brisket's 138 degrees, nicw slow climb of about 3.5 hours;


Brisket's 163 now? COOL;


It's time...time to load up that SNP to the gills!!!!!!!!!!!! Well, maybe I can (someday) find a way to fit more on 'er...;

Oh, did I mention the sides I have to cook? Darn, I'm sorry, here they are;

OMG...ready already??? So fast, so little time to enjoy festivities;


How's that Brisket coming along, anyway? 180 degrees? OK...now were talking. Get some plates ready in about 2 hours, then we'll eat!!!!!!!

I'm still havin' fun, even with the internet trouble!!!!!! I love what I do for my family. Heh, some of the stuff I cook I don't even get a chance to taste...that sucks, but it's all for the family, so, if they eat good chow I'm happy with myself. LOL. And they always seem to have ranting reviews. I love being a Husband and a Dad who knows how to please with FOOD (ahh, smoked food, sometimes grilled, sometimes a nice mix of smoked & grilled like this is super!!!!!!)

The crew is gettin' a bit hungry, so I stole from the small end of the Brisket before chow time!!!


Brisket, Spare Ribs, Shrimp, Yellows & Zucs, oh, I'm sorry, I forgot the Peaches. Folks, don't be afraid to go CRAZY with food & the great outdoors. Whether it's family, friends, neighbors, relatives, heck, throw in a few enemies...does life get any better than this?

This was such a great smoke and grill session. Too many categories to post as seperates...had to do it as one. It's much better that way anyhow, it was all in one, so I figured...show it that way. Oh, crap! Gotta go outside & check out my beef jerky (in the process). It's been smoke/drying for 6-1/2 hours now. This is really crazy...look later for a Cube Steak Jerky!!! Yeah, U read correctly...

Later... I love this place!
