Brisket question

Hi Gang, been away a while , traveling and such ....BUT back Smoking ! 

I have a kinda dumb question...So here goes .... I have to smoke two Briskets ( I have done 2 and even 3 at a time)  BUT one is 8 pounds , and the other 2.5 pounds .  I am guessing I CAN do both just monitor the temps of both assuming the smaller one ( 2.5 pounds)  will be done first.

Any thoughts ? comments ?  reassurances ?
 
maybe put the smaller one in once the bigger hits 160....just an idea. OR start them both at the same time and you'll have a snack before the main course :)
 
Well..........I'm confused as all get out !  started both at the same time , smaller one on the lowest shelf just above  the water pan the bigger one on the next rack .  They both have been about 5 to 6 degrees apart during the smoke .

I did raised the heat more than normal figuring I would watch the smaller one closely  ............... WELL..They both finished  at the same time !  They look great ( I have not cut them to check they are both foiled and resting now  BUT beautiful bark on both  hoping for the best the smaller one is a gift tonight ( so I guess I'll see ) and the bigger one is for tomorrow ...so could be real "good" or a screwed up Christmas dinner 

ANYONE ever seen this be fore ?????/
 
weird!

i've smoked a 5lb and a 7lb at the same time and they finished the same time. double wrap them in foil and let them rest for 1-3 hours...then refridgerate. reheat about about 300 and in 2 hours you should have the temp up to around 195 or close to what temp you want. reserving that liquid will keep the meat moist
 
 
 Well.......( again )  Shocked and happy !  

Christmas day I let the Brisket ( the large one) warm to room temp, putt it wrapped in foil into a foil pan added water ( about 1 .5 inches )   stove on 250 until I got it to 140 IT 

Unwrapped it ....and sliced ....MAN ! nice smoke ring great bark and moist juicy  Proud to say every one loved it ate every last piece , still waitting for a report on the small one I advised they guy how to warm it
