Brisket On new Bronco

I picked up an OK Joe's Bronco on clearance for $125 at Walmart a few weeks ago. This past weekend was the first chance I had to try it out. I had a brisket in the freezer from the half of beef we bought in the spring and I thought that would be perfect to try out the new cooker...

Got the Bronco up to 275 with charcoal and hickory chunks, seasoned the meat, and got it on...

5 hours later, meat was at about 202 degrees, probing like butter...

All in all, pretty pleased with the new cooker. Held temps real well and I didn't have to mess with it the entire cook once I got it going. I do have to say, I prefer the flavor profile off of my stick burner compared to the charcoal and wood chunks. But, for $125, pretty good addition to my lineup of cookers...
 
That's a lookin great smoke! Can you describe what you mean by your preference in flavor profile of your stick burner over charcoal/chunks? Oh... I look forward to the day I get a stick burner! I love my charcoal though...

Don't get me wrong, it turned out excellent. I just think that pure wood flavor of the stick burner is a better taste IMO. I think it has something to do with the way the charcoal gets burned in the Bronco. Since you only light one small section, there is a continuous "lighting" of new charcoal as the fire works it's way through the basket. It's not like when you light a full chimney and let it ash over to cook a steak... Again, I'm real happy with this cooker. It's just a different flavor than what I was used to...
 
Looks delicious!! Yes, there is a difference between stick burners and grills. To me and the Mrs., the smoke on the stick burner is not as pronounced as is with the grill (Weber 22" with a slow n sear). Congrats on a nice find for $125!!!
