I live in Canada so not a holiday here but my wife is a dual citizen so fancy up the dinner menu.
I put rub on last night and then starting at about noon, put the 4 1/2# brisket in the MES30 at 250F.
At about 4:30, I lit coals to have an indirect cook on the OkiJoe. By 5, the brisket was moved to the OkiJoe.
A minor issue in that the temp took off. I discovered that the temp probe was too close to the outside. Once fixed that, I ran until got to 190ish. Put it on direct for a few minutes.
Very tender - very tasty. We had pasta salad as a side.

May not be a holiday for you, but celebrate that brisket!
 
I'm eating a brisket sandwich as I type this. Still tender and tasty.
