Got a small 5# out of the freezer,into the smoker at 8:30 AM 

Sitting on a bed of Carrots.Onion,Celery & Garlic



It was rubbed with SP& Worsy sauce

Here it is right before wrapping


Took 10 total cooking IT was 205* F


Rested about 20 min.


Served with Asparagus,Mashed Potatoes,and the Au Jus

I like where this is going so I'm in for the ride!

I agree. It looks like it could be a meat glue special! But it does have some nice marbling like it could be from the point.
 
It's a Brisket section I cut them into thirds when I buy them.Sitting at 152* F

Looks like a Prime Rib . . . w/o the rib!   I agree, very nice marbling.  Can't wait to see how this one comes out!
