Dad turns 77 years old today. Of course I scheduled myself a 12 hr shift today on my side gig without thinking. So we are doing his birthday tomorrow.
Got a 17 pound prime brisket at Sam’s.

Pretty nicely marbled. Trimmed up and dosed with a mustard binder and coated with Kinders salt, pepper, and garlic. Onto the gasser smoker with post oak chunks for smoke.

Looking at the pic I could have hit the sides a little better with the seasoning. Gonna slice the flat and make burnt ends out of the point. Still gotta work on my trimming skills. Gonna be an all nighter. Got the coffee brewing and a good book to read. We’ll see how it turns out.

six hours in and been in the stall at 170 degrees for an hour. Wrapped in pink paper. And back into the smoker. Doesnt quite have the bark I want but it’ll do. Smells mighty darn good though.

Well the brisket turned out pretty good. Probed tender at 205 degrees. Let it cool on the counter for about an hour then cut the point from the flat. Foil wrapped the flat and into the oven set on 170 Degrees. Cubed the point and made burnt ends from it. While this was going I made up a crockpot of Dutch’s wicked beans. Sister in law brought home made Mac and cheese and mom made her fabulous tater salad. Had a great time visiting with my folks and family.
