Brisket ~ Foamheart Poofed!

I didn't take photo's of prep or smoking. I really didn't plan on taking any at all, I am sure I have 2 or 3 threads of cooking brisket here already. Besides when ya got a brisket guru like Gary, He's the educator with a PhD in brisket. Anyway, I saw them on sale this week at the butcher shop, like 2.50/lb (LOL a sale). Well I got a 17.9 #.. You the old saying go big or get off the porch!

This is how it ended up, and I was worried if I would get any.........

This is what I always heard was a "West Texas BBQ'd Brisket plate. You can get 'em at any BBQ shack you see west of Abilene.

Sliced Brisket. Pinto beans, slice of fresh white onion,  some kind of piccalilli (this happened to be cauliflower, made last week), a couple a slices of white bread. The corn on the cob is completely optional! You can sell that all day long on the side of the road for a dollar a plate!


BTW I think I mentioned it was nearabouts 18 lbs. A full packer, the biggest point I ever saw and had a big piece of leg on it too. Below is all that is now left on the counter. Seriously! I always do briskets large, so we can have sandwichs all week afterwards. I might get a sadwich for supper outta what is left....LOL


Seriously, I didn't even get to slice it right. The neighbors all dropped by, Sister and Brother in law, sent some to my childhood second mother. By best buddies mom who just realized at 92 she shouldn't be living alone. Whats worse is my buddies figured it out and have attempted to interviene .....LOL  The neighbor came and ate a sandwich, took a sandwich home for "supper", and came back and asked for another....LOL

Anyway, **Poof** it was gone!  

I am sitting her wondering if the are still on sale at the butcher shop. LOL  Naaaaaa....... got spare ribs for this week!

I hope yall all have a great Labor Day, Please take a min and send a bit of positive energy towards Houston today, even if they don't need it.

The good ole days....... 

Made up a big pot of BBQ sauce this last week. I have a couple a spare ribs need some attention this week. <Chuckles> I am really not a big sauce man, but at least once a year I want to get it dripping off my elbows!

Thats how it always happens around here. I just figure its a southern thingie, course it always happened when I was in west Texas too, so maybe its just me.  Its why we use large pieces of what used to be cheap meat that needed little supervision for a long slow cook.

Its an excuse to do outside projects and drink beer while doing them, instead have having to wait till they are finished first.

Doesn't matter how much you cook, there is never much left, if there was I would feel insulted I think. LOL

Hahaha great post.  The meat looks good.

I had made a 10 pound brisket a few weeks ago that 3 sandwiches got pulled out of.  Then a surprise bday party was thrown for me at my place and I found out the next day that everyone ate the brisket while waiting for me to get home hahahaha.  I then had to go do another one the following week ... POOF! :)
 
Boy that's a lot of meat to go poof that fast Kevin. It was obviously REAL GOOD!! Its always nice to have people feel so comfortable that they just drop in.

Its just the south, its just the country, folks don't lock their doors and folks will walk in without knocking. Just open the door and shout.

I had to stiffle a laugh last week, the neighbors house was broke into. Let me finish, let me finish..... he was in Houston for the weekend came home and they had pulled his door off the hinges to get in. He said it really chapped his butt because he had to replace the door and sill, when all they had to do was turn the knob, it wasn't even locked. LOL

Don't just hate it when ya gotta smoke another piece a meat?  NOT!! Its like an extra birthday present.

My buddies always did that to my Mom. She was short and sweet and always trying to feed everyone.  They all said she was Aunt Bee..... LOL

Its hard to beat just a pound of pintos in a pot of water, add a couple of smoked hocks, a toe a garlic and some chopped onion and its a meal! Oh don't forget the cornbread and sweet milk.
 
Looks good Kevin, Can't go wrong with Brisket.  Don't know about that PHD just an old guy with lots of Briskets under his belt (Literally)
