You can find the news letter somewhere here but I would recommand that you look up Tip's Slaughter House brine. You can find it in  the wiki section of this site. I really like the brine and I use it on all my poultry.

I will second Tip's, it's the only one I have used, although i will be trying the cranberry one soon
