Cool video! That is a lot of work! I just read “Smokelore: A Short History of Barbecue in America” and it hit on a lot of the same points in history. I enjoyed how it followed the flow from Carolina’s to the north and it’s evolution in Texas. I live near Mount Vernon and DC so it’s kind of crazy to read about Washington blessing the key stone for the capital followed by a bbq. Good work!
