So hope I am getting it correctly, 8 pounds of charcoal four chunks of cherry vent wide open reached 500 pin them down to number one held around 300 now at half hovering at 275 seems like it’s pretty reactive also coated everything inside avocado oil spray, pondering first cook. I’m thinking ribs thoughts?

Ribs do sound good. A pork shoulder might be more forgiving for eating while you get things dialed in though. Just a thought. As an old coworker used to say " that's just my opinion and opinion are like aholes. Everyone had one and they all stink unless it's yours". Nice guy, but kinda an odd duck.
 
Nice looking smoker there!! I'm sure you will have fun with that! Yeah ribs sound great to me! But as bigfurmn bigfurmn said a pork shoulder maybe the way to go for your first cook! Or just go for it with the ribs! It's all about learning your pit!

I buy beef 1/2 cow at a time. I’m towards the end of one. I have short ribs, dino ribs, couple brisket flats, and a chuck roast.

I was going to suggest a bigger bottle of Jameson, but that's up to you. If you have flats you can try this recipe:
smoked chuck is also tasty, chicken thighs etc. Ribs are not that difficult so If you're hungry for them, go for it.

I have been wanting to try that orange forever. Never found them little bottles. Was holding for special occasion and getting into smoking and new smoker was perfect occasion. Thanks for sharing recipe. I once did Harry So recipe in oven and turned out good. Can’t wait to try to smoke one.

Nice smoker, no mater what you do first, enjoy the experiance and keep noptes as you go. Trust me it will help until you have done it enough to not need the notes.

Also, my brother in law calls those little bottles of booze , Spark plugs. Couple of those to start off for a fun evening.

Getting only a brisket flat smoked, tender and not dried out is not an easy chore. The recipe above is from our own SmokinAl SmokinAl and is definitely a very good method for doing a brisket flat.
