Breakfast casserole

Started making this casserole every other week to eat during the week for a quick breakfast. Pretty good flavor and easy to make. 20220123_132111.jpg diced up a green pepper, red pepper, onion and some mushrooms. Through in a clove of garlic. Took it out on the griddle and grilled that along with a lb of sausage. 20220123_133543.jpg once inside I shredded 4 pcs of break and put it in the bottom of the pan. Mixed 10eggs with a 1/2 cup of milk. Poured in half of that mixture in the pan. Then put the meat and peppers in. Poured the rest of the egg into the pan on top of everything and put 1/2 cup shredded cheese on top. 20220123_133819.jpg into the oven at 375° for 35 min. 20220123_141723.jpg Nice easy breakfast for the week!

I do a stove top breakfast fry.

You have to scale the cook to the amount of folks
A pound of breakfast sausage per 3 or 4 folks
2 or 3 eggs per person
Some shredded cheddar by eye per person
Same with some Parm
A TBS or 2 per person of your fav salsa per person
Seasoned salt or Sazon to taste plus pepper
Diced onion and garlic to taste

Brown and crumble the sausage
Add the onions till wilted and then the garlic
Scramble the eggs and add other ingredients and then add to the skillet.
Cook like scrambled eggs
Enjoy!
