Got all my work done for the day and was home just before 7:00 this morning. Bummed around for a bit and started getting hungry and decided breakfast was in order. Had some leftover brisket chopped up from the biscuit bombs I made last night so decided to incorporate it into breakfast this morning. Decided to make some migas, which we both love. Got all my stuff together in advance due to the griddle cooking everything so fast.
Started by cutting up some onions, a jalapeno, and a home grown Roma tomato that was given to us by friends
Get the onions ans jalapenos on the griddle
Let that sweat down a bit then add the brisket and tomatoes
Let the brisket heat up and add the eggs, a bunch of cheese, and the crunched up tortilla chips. God what a horrid looking mess!!
When the eggs are almost done toss on a couple torts to heat up
Plated and ready to eat. This was one huge plateful of food!!
Boy this was good!! Not the first time doing the brisket migas but the first time on the griddle. The key to having this come out well is to not overcook the veggies. Tey need to still have a bit of crunch to them. A quick but very tasty way to start the day!!
