Got all my work done for the day and was home just before 7:00 this morning. Bummed around for a bit and started getting hungry and decided breakfast was in order. Had some leftover brisket chopped up from the biscuit bombs I made last night so decided to incorporate it into breakfast this morning. Decided to make some migas, which we both love. Got all my stuff together in advance due to the griddle cooking everything so fast.

Started by cutting up some onions, a jalapeno, and a home grown Roma tomato that was given to us by friends

Get the onions ans jalapenos on the griddle

Let that sweat down a bit then add the brisket and tomatoes

Let the brisket heat up and add the eggs, a bunch of cheese, and the crunched up tortilla chips. God what a horrid looking mess!!

When the eggs are almost done toss on a couple torts to heat up

Plated and ready to eat. This was one huge plateful of food!!

Boy this was good!! Not the first time doing the brisket migas but the first time on the griddle. The key to having this come out well is to not overcook the veggies. Tey need to still have a bit of crunch to them. A quick but very tasty way to start the day!!

That is a huge plate of food! Looks awesome. I agree, the veggies are always better crisp than soggy.

Thank you John. I only eat two meals a day anyway so gotta make that first one a doozy to carry me through afternoon beers to dinner.

Migas is one of Tracy's favorite breakfast food but she'd rarely order it in a restaurant back in the day when we used to go out to eat because the veggies were always cooked to mush. Then I made it for her (I like the veggies the same way she does) and she's big time back in the Migas camp.

Thank you Ray!! Most times I use a good dollop of our smoked fire roasted salsa but this just looked really colorful and vibrant I just left well enough alone this time.

That's a great looking breakfast! Never made migas. Cooked up similiar stuff but never added tortilla chips in.
