I'm having trouble with my Ambient temperature dropping when i put the meat in the smoker (Bradley Smoker w/dial control). I get the temperature setting stabilized at 250F. Within an hour of starting my cook the temp drops to ~190F. I spend the next few hours trying to control temp. I was thinking about staring my cooks 25F hotter so the drop isn't as drastic when i load the smoker. How do other electric smoker owners deal with this TEMP drop?

I've been told there is an Auber PID controller that works. I'm not much of an electrician, Does anybody know if there is a thread on how to install onto an old black Bradley smoker?

Google Auber instruments, everything you want to know about their PID hooked to a Bradley.
