Got bored today, threw a ham in the smoker. Nothing special.
Broken down for freezing most of it. Cubed some for a burnt end experiment along w/ the belly burnt ends still on.

Ends came out great. As far as freezing ham, ya I vacuum pack too. Seems okay. Mostly use for soups so maybe I'm missing true texture/taste test. I'm happy w/ it.
My problem is I live alone, dont know anyone good enough to share food w/. I cook up small batches but sometimes a small batch is a 7 pd ham, lol.
 
Looks great . Never had any off issues freezing a vac packed ham . Doc , have you ever tried pulled ham ? Take it to 205 or so and pull it . Makes a great sandwich .

Haven't tried pulled, sounds good. Have 2 more in the freezer to do.
 
Not sure if it works with store bought . Might be to dry . I used cured pork butt . Don't want to lead you in the wrong direction .
