I am trying to find some good books on the science level of how like salt/acid changes the profile of the meat, what works well together and just a more indepth explaining than most typical bbq books. any good youtube channels?
 
Franklin's book on BBQ delves pretty deep into cook science and has about 2/3 of what he does when he cooks.
His section on the science of smoke is outstanding.

The only books I find adequate are Marianski's and the USDA for scientific accuracy....

The Perfect Steak Cookbook by Will Budiaman was a decent quick read!
