I am sure this might ruffle some feathers but Rytek's book is good as a text book. In my personal opinion his recipes are bland and mostly tasteless. For the beginning sausage maker I would recommend Ruhlman and Polcyn's book Charcuterie. To further understand the concepts behind curing and sausage making I would recommend Rytek's book but also the Marianski's books.

I think i will give Marianski a try.

Thanx guys.  Does it have info on pork bellies and roast and stuff like that.

I have the basics for sausage making and smoking between Ryteks and Eldon books and the forum now i want something that covers more of BBQing.
