Well I went out and the other day and came across a boneless ribeye roast.
This one came in at almost 17lbs.
Oh boy was I drooling looking at this while in the meat section. Looked over at the Misses and before she finished saying go ahead. It was in the cart.
Since it is a nicer night. I'm cold smoking it a while before the heat is added to it.
Not a good picture of it. But you can just make it out through the smoke. More pics to come later.

I bet it will be good!
I think I would have cut it into 2" steaks, and put them on the grill!
But I'm sure your roast will be awesome!!

Every time I have smoked 1 its to rare then sliced and grilled to the family's spec's,me and the son like rare but the rest not so much,will ck back for the finished pictures :)

Like you and your son. I LOVE rare. But this one is not just for me and the Misses. It will be taken to 150 then pulled and let it rest. Put in my cooler and taken to a family get together for all to enjoy today. The ends should be well done for those that like it that way and as it gets closer to the center it should be more medium to medium rear for those that like it that way.
 
Well family get together went great. Not much remained. Ribeye went quickly after I sliced it up. Can't show a picture of my plate. The cook missed out on it. But it made me happy knowing it was liked big time. I did get a picture of the plate before things were gone.

Turned out about medium. All in all it was a great turn out even with the heat here.
 
That looks good, they better have been happy after dissing the cook.
What!? The cook missed out on the rib roast?
That just ain't right, ain't right, nope.

Which is why I always try to plate up first, or at least set mine aside, before calling the ravenous horde in.

Yeah. I thought the Misses was setting me up a plate. Normally she would. Still had other good food to eat. At least nothing went to waste. Good time with family more important for me.
