Boneless Bottom Round - What to Do?

I have two boneless bottom rounds about 3 pounds each and am not sure what I want to do with them. Any suggestions. I thought maybe like brisket or even just doin em up like pulled pork.

I have a nice brisket rub I was plannin on usin.

What to do...

Well first off Ray what do you want???? Sandwich meat (my suggestion) or like the brisket I don't think that it will pull. It too dense of a meat. Now I would rub it and then smoke it to maybe 140°ish for rare in the center and med rare on the ends. Then slice it and it will make some great lunch meat for a longtime. I have done a couple of sirloin tip roast with nothing on them but the flavor of the wood. It's so good that our kids went right out to the store and came back with 2 more for me to smoke for them.

You're right bout the density. I'm thinkin of goin with the later you said. Take it to bout 140 and slice it.

you could take it to 130 foil them wrapp in a towel, put in a  small cooler and fed ex them to me so i have some sandwich meat!

Id take them to 130. Completely cool. Slice thin and steam quickly to reheat of flash in hot beef broth for a minute. Awesome sandwiches.
