I just pick up some really nice looking bone in pork loins and I'm thinking of smoking it whole and then cut into chops. Has anyone done that before and if so what temp should I take it to. I'm thinking about 165ish or something like thats. It's really a very nice hunk of meat and I got it for 1.20 a lb so I bought the whole thing cut in half. It's about 20" or so long and 10lbs each.
 
165° sounds good to me Mark. what are ya using for a rub or seasoning?
 
I have a new store bought called country boy rub. I got it from the same butcher that I got the loin from. He says it's good
 
155- 160 for me and foil.
 
I would smoke it to an internal temp of 160, then foil it for an hour or so. That is the recommended temp from the USDA.
