It was our nephew's birthday and his wife asked if we could do something at our house for him. Of course I said yes and then the dilemma was what to cook? Bourbon marinated steak was the plan because I hadn't done it in awhile. I had a thick top sirloin in the freezer and my best friend, who happens to be the father of the birthday boy's wife, said he had some thick bone-in NY Strips. I have posted about my process before HERE so I won't go into all the details again. I made up the marinade and put the steaks into the fridge for 24 hours. I have marinated them longer, but 24 hours seems like the right amount of time. Anymore than that and the marinade seems to overpower the taste of the steak. Also included a ribeye that wasn't marinated because the grandkids may not like it...
On a kettle with lump and a couple of splits of oak for a reverse sear...
Starting to look about right...
I.T. up to about 120℉, onto another kettle to get a sear...
Pulled to rest...
Sides included a Olive Garden style salad, baked sweet and russet potatoes, a pasta salad, and by special request from the birthday boy(man), Mexican street corn...
For the street corn, I blanched 14 ears of fresh corn from Walmart and cut it off the cob. I pan fried the corn in butter until starting to brown...
In a bowl I mixed together...
Slice the steak...
Served with toasted bread, but no pasta salad for me, not a fan. For the special occasion, we broke out the fine china...

- 8 T of Duke's mayo or your favorite mayo
- 4 T EVOO
- 3 chopped jalapenos seeds removed
- ½ cup chopped red onions
- 5 chopped garlic cloves
- Juice from 2 limes
- 1½ cups Cotija cheese
- ½ t chili powder, I make my own and I'll post the recipe if anyone wants it
