Biltong Wiele / Wheels

    Does anyone have a recipe for biltong wiele by any chance. I tried making it from a droewors recipe but the taste isn't quite the same

    Any assistance would be great

    For 5 pounds of meat I use a few table spoons of freshly toasted and ground coriander seeds, kosher salt as needed and black pepper to taste. For the wet ingredients I use malt vinegar and Worcestershire sauce around 80/20 enough to coat.

    Layer meats in a nonreactive dish and after 6 or 8 hours flip the meats ready for drying after 12 to 24 hours of marinating.
