So I made Keilbasa last year and cleaning the freezer as its a new homemade product I needed new recipes to use it. I bought two bags of kraut and thought traditional chopped and kraut with caraway like grandma used to do. Looked for some recipes and tripped over Bigos and had to try it. https://oventales.com/wprm_print/one-pot-bigos
Used
1 Keilbasa rope
1 deer neck chopped up
1 onion chopped
Simmer all that browning the meat. Added spice when getting close
1 Tbsp Caraway seed
1 Tbsp Juniper berries
1 tbsp garlic powder
1 tsp black pepper
2 cups water
2 beef bullion cubes
1 can tomato paste - Recipe said 2 tbsp, I said nah, all of it.
2 bags of kraut, drained
2 bags of peas -
recipe called for another head of cabbage and I didn't have it. I didn't think I needed it until I quickly found it to be meat stew with a little kraut. So the freezer showed me peas and two bags went in. Next time I will get a head of cabbage. Cooked down for a while. Heavy caraway seed flavor is the predominate spice. I think it could be altered more, but I'll let the girls offer suggestions later on.
