Got a nine pound butt yesterday and let it sit in the fridge overnight with mustard and Some store bought apple rub

Unwrapped and put in the smoker at 6am

Two racks of ribs with Jeff's rub and Dutch's wicked baked beans. I added the skirt meat from the ribs to the beans when they were done.

6:30, ribs done, put my secret BBQ sauce on one and left the other in the nude.

Going on 13 and a half hours, butt at 200, waiting patiently for 205. I'll post the finished product later tonight!
 
14 hours later and temp is finally 205.  Bone came out like a hot knife through butter and butt is wiggling like jello.
