Cooked these up last weekend on my Stumps Baby. Cook ribs at 275F for approx 3 hours until you get the color you want then wrap in foil and add beef consume and 1/2 pint of beer. Cook for another 2.5-3 hours or until they're reading about 200F-203F between the bones. These are not the tough ribs you had as a kid. These things end up just as tender as well cooked spares and they taste like brisket on a stick.
