The main course was loin. Followed a recipe from a bother here with marinade-ginger, brown sugar, garlic, soy sauce. I put in the smoker with the marinade in the pan-had my first loin get too dry-oh yes-injected with mixture pinapple & apple juice. Had wings & ABT's as well. Haven't smoked for several weeks (paying for some equipment I bought

) Loin was great real juicy wife liked it (highest accolade) wings & ABT's were good as usual.

That's some good looking pig loin.

 I have found that if you smoke a loin it either has to be in liquid or wrapped in bacon.

 it does dry out very quick.

Now that's one great day of smoking there Chainsaw. I like to smoke many things too. The wings and the ABT's should be a good app. Then the loin comes in for the main... Brillant !!!

Thanks for the tip.  I find my loins dry out rather quickly as well.  (Well, there is really nothing wrong with my loins, it is my smoking ability.)
