I have no idea how fast sumac grows. I would just prefer to use something that can thrive despite our use of it. I don't like seeing massive forests reduced to prairies just so I can have a pretty cutting board.
Im not a peta or greenpeace freak but I do want to take steps to insure that my children have a place to hunt and fish.

Yeah, but it's NASSSTY wood. Freakin' stinks. Bamboo is all good. Personally, if yer wanting to ensure that, I suppose recycled plastic might be a good alt. for boards, maybe.
But a good end grain wood block could conceivably last for generations too. Longer than it takes to grow a replacement. Just plane it down every 20 years or so.
must be Rich.......cause you are right.........hard as a diamond........can't break it i know.......got mad at my kids one time.........and tried to break a bamboo back scratcher over my knee...........lets just go onto say.......i carried a bruise for 2 weeks............LOLOL.......and the back scratcher is doing fine............
here here on the end grain cutting boards rich.............and John Boos aren't THAT expensive.......cept when i fowarded it to my old lady, she freaked.......HOW MUCH FOR A CUTTING BOARD!!!!!!!!!!!!!.............lololol
