We didn’t see our son until 12/26 so we made a giant dinner for then. Picked up a rib roast on clearance a few weeks back and had a turkey breast too. I started with the turkey and then on to the rib roast. Both were on the WSM at separate times but used a mix of hickory and apple for both. The roast was rubbed down with SPOG, Worcestershire sauce, and a few other spices.

The turkey was good, but not my best ever. The prime rib was the star. I had done one “rib roast” before that was also on clearance, and that one seemed to be the scrap/botched up cut from the store. This time was a nice cut and I wanted to do it justice. My wife was hesitant at first because I pulled the roast at 130 and it really looked rare at first, but after letting it rest, it turned out a nice medium rare...just how we all like it. I wouldn't be complaining if someone put a plate of that down in front of me. Nice.
