Gonna try my first beer butt chicken tomarrow. How many try to use something to catch the juices while it's cooking ?
What works and what doesn't ?
 
I put a pan under mine, but rarely use the juices. Abelman uses a bed pan set up that collects the juices real well.

I don't collect the juice on poultry but a pan under should work fine
 
That's what prompted my question , do you save / seperate / and reuse the juices Ableman ?
 
Sometimes, but if I don't, it still makes for am incredibly moist bird. I don't brine so it works well for me. I have done different kinds of beer cans as far as the support goes. This one works the best for me and has produced the best chicken for me.

End of the day, alot of this stuff is just personal preference. This just happens to work best for me. That's half the fun in this art, playing around, trying new things and figuring out what works best for you. Personally, try a lot of stuff and think outside the box a bit.

I don't care how good you are at smoking, your job, etc., there's always something new to learn. Some may not agree with that, but it works for me.
