I'm looking forward to Saturday as it will finally get chill enough to cold smoke a couple bricks of cheese in the morning.
Been nice here lately , like 40s to 50s. But this morning when our Doberman went to edge of porch and stopped and wanted back in I checked weather... 16 degrees wind chill... it felt cold! Come mid winter it'll feel nice lol!

Salt, muscovado sugar, juniper berries, rosemary, cure#1 for 6 days, dry overnight, smoke at 225 4/5 hours. Been burning ash lately, that's all I could get
 
That looks quite tasty! Also, had to look up muscovado sugar. Never heard of it before... interesting.
