I have been working on making bacon as time has allowed. A variety of bell bacon, Canadian Bacon and Buckboard bacon. Have used a mix of Pops Brine, Bearcarvers, and Disco's. All smoked on Applewood. Been playing with cold vs hot smoked. 10-17 days brines. So glad I started making my own. Thanks for the inspiration SMF!
