Hello fellow smokers. I have been out of town working for several weeks. Just got home and will try to get back to smoking HAWG, even though the heat index has been over 110 the last few days. Had these spares frozen since April and thought I would thaw in the refrigerator then trim down to Saint Louis style and smoke em Friday. I always buy my pork at Sams Club. Quality pork every time. Never disappoints. I'll post some pics Friday during the smoke.
